[I've not been personally] Asador Real is a traditional restaurant for a proper sit down dining experience. They focus on meat dishes and tapas. So expect roast lamp, suckling pig and steaks. It's in the central, historic (touristy) part of Madrid, so you can go there for a big lunch or dinner after some sightseeing.
