• We’ll visit the Kimura Fresh Fish store, a fixture of Nishiki Market since the Edo period and a supplier to Michelin-starred restaurants, to see how locals order seasonal fish. You’ll learn how to assess its freshness, as well as techniques for preparing and slicing fish specifically for sushi.
• At the studio, Sushi Lab. by Sumaya, I’ll explain the culture of sushi, and walk you through the art of making sushi rice and miso soup, offering expert guidance throughout.
• Best of all, you’ll learn how to prepare three kinds of sushi—nigiri, temari, and temaki—and then enjoy it as a group meal.
