I will teach you how to make the real Italian pasta from scratch. We will make two italian traditional pastas: ravioli and fettuccine. In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need. Then the cooking class can begin! You will become a perfect italian chef in only 3 hours. When we are finished we will cook, eat, and savour our pasta together. You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . We will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two typical Italian sauces. The experience includes a delicious tasting of local cheese and Italian Prosecco. We can also accomodate GLUTEN allergy guests and VEGAN guests for a very tasty fresh pasta. We will cook all pasta and the sauces made during the class, eating our different kind of pasta done, sipping good Italian wine. An express tiramisu preparation will follow as a dessert. We'll have a day trip through the woods north of Rome, hunting truffles with the help of trained dogs, we will pass through areas rich in history of outstanding natural beauty. After the trip we will go to have lunch at my house, we will learn how to cook truffles dishes and we'll eat them for lunch with a very good wine. I will cook for you many different courses, all with fresh truffles! You will can taste many different combinations with fresh truffles! Other things to note We have two locations to do the tour, both easy to reach and close to Rome, it is possible to change location even a few days before the tour. Throughout the years, we have mastered different mosaic techniques, both traditional and modern. That is why you will find the studio full of original tools, sketches by famous Italian artists, and important mosaics masterpieces. The workshop will begin with an introduction to Roman mosaic technique and history. Afterwards, you will practice the principles of texture, composition and marble tile cutting to create your own mosaic to take home. It is fundamental to us to transfer the real techniques of Roman Mosaic craft. Therefore, your mosaic will be correct and based on Ancient mosaic rules. The final result is your own personal mosaic to take home that will be approximately 7” x 5”, weighing 14 oz. A master mosaicist will share important tips, and provide the assistance you need to ensure the best result. This is a full immersion work experience. You are going to work in an authentic mosaic studio and handle specific tools. For safety reasons, we recommend starting this experience from 12 years on.

Join us to discover a real italian family and learn how to cook fettuccine and ravioli without machine. Mine are small groupes, to enjoy each single moment and pay attention to everyone carefully. We'll make two different kind of pasta from scratch, only using our hands. In the meanwhile, we'll prepare two different sauces, step by step, while drinking some good wine and tasting a delicious bruschetta. Last but don't least , each course will be dressed with olive oil from my grove, you can taste the difference! After that we'll sit around the table with my family to enjoy our hand made lunch, and talk about your next restaurant, because after this experience you'll be able to make two of the most famous italian recipes. We'll also visit the stunning Villa d'Este (UNESCO site, free for people under 18 and over 65), known worldwide for its fountains and monuments. Be prepared to live a unique experience, in contact with dogs and nature! Take a break from the city chaos that fills our days every day. After an introduction to the world of truffles, we will begin our hunt. You will see how the trained dogs hunt for truffles and the passion they have, this being a very rewarding activity for them. Depending on the period we will go to different types of woods and the meeting point may change. Truffle hunting is also accessible to children (my dogs will be happy to play with them!). After the truffle hunting we will have a lunch with truffle dishes. The menu is vast so I don't suggest you have a big breakfast! We also have menus for vegetarians, celiacs, vegans and we can also change it according to your allergies or intolerances. During lunch we will have the opportunity to get to know each other better, drinking good wine and eating fresh seasonal truffles. Other things to remember. Long, comfortable trousers are required (ankles must be covered). I also suggest wearing a pair of boots. If you don't have them, sneakers are fine too.

During my cooking class, you will be able to immediately immerse yourself in a familiar and informal atmosphere, also thanks to the warm and welcoming ways of Mamma Nora. Before you know it, you will find yourself with an apron around your neck and ready to be part of her kitchen! You will discover and learn the secrets of homemade pasta, how to prepare a good savory sauce to accompany it and make one of the most famous Italian desserts: Tiramisù. Of course the menu can change according to guests's requests. We will cook together using mainly our all organic products, starting from the eggs of my hens. we will use flours of ancient Tuscan grains and above all we will cook with seasonal vegetables as they did in the past. We will cook inside the old celler of the Farm, as it is the coolest place we could find in summer! We will visit the garden to pick up some herbs, and for the brave ones, there will be a visit to our chicken coop! Once finished working, we will set the table and we will finally enjoy our wonderfully prepared meals. Other things to note Please, bring a lot of joy! If you wanna try something creative and magical this is the experience for you! We will meet at Circus Maximus for your Incredible Light Painting photoshoot! You could be my model and create unique portraits with this technique. Light Painting is an art form of using torches to paint or draw in a scene while a camera shutter is left open during a long exposure photograph. You can also experiment and learn to create fantastic effects. You will also have the opportunity to use my professional tools: optical fiber, light tubes, sparkles! They will be easy to use and very fun! Once our photo tour is over, I will send you all the photos via email to share and/or print them! At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. You will get unlimited photos during our 1.5-hour photo session time and sending all original photos in 8 hours. After that you should choose 15 of your favourite photos (25 photos in private booking) for colour editing. In 12 hours will send cool edited photos back. I am making an Art and my eyes of view helps me to catch the natural moments with sincere, warm feelings. I am editing photos very naturally for not to lose true light and nativity.
