Let's visit and walk around Tsukiji fish market(Old Outer Market for consumers), Uogashi Market(New market for whole sellers) with me.
Experience street food and watch how to buyers select fresh fish in there. As I'm a Tsukiji fish buyer and chef of the cooking class, I know how to distinguish real fresh and seasonal fishes out of plenty of fishes in the market. I will get today's best fish for you.
After that, moving to chef's studio to cook and eat them while it's fresh. The Studio is located near by Shibuya(3 stops from Shibuya ). You can enjoy not only fish dishes but nice Tokyo city view from the Studio.
Enjoy watching how to fillet the fish using special Sashimi knife by chef and taste Nigiri-Sushi,Sashimi,Miso-soup with traditional japanese Sake or local beer.
If you want to experience filleting fish and cooking Sushi, I will instruct you with my pleasure!
That is the highlight I'd like you to enjoy.
We will finish at the Kitchin studio and I wil take you to the nearest station, Komazawadaigaku station, located 3 stops from Shibuya, Denentoshi line.

This was the best Airbnb experience my wife and I have done so far. I would highly recommend this experience to any single traveler or couple/small group, it will make your Tokyo trip that much better. Iwabuchi did a great job of touring us around the famous Tokyo fish market and he took the time to educate us along the way in a manner that we never could have gotten out of a guidebook. He knew some of the vendors and his relationships helped us buy incredible fish and taste some delicious green teas along the way. As if this wasn’t enough, he drove us to his place after the market and prepared multiple courses of delicious sashimi, soups, and nigiri for us, all made with ingredients directly from the market that day. It doesn’t get any fresher!
Iwabuchi is knowledgeable, speaks English well, and had engaging conversation with us. He also educated us on lots of Japanese cultural questions we’d accumulated throughout out Japan travels.

市場が豊洲に移転してから、築地には市場もお店もなくなったものと思っていましたが、実際には違っていました。 巨大な市場はなくなりましたが、規模が縮小された市場ビルが作られ(むしろ小さい分、お店を回りやすい)、場外市場も活気がありました。 所狭しと専門店が並び、楽しい!食べ歩きも楽しい! 色々お店を紹介してくれたり、お店の人と仲良くなったり、これから築地で買い物することが増えそうです。 ホストがお魚を買って、一緒に車に乗せてもらい料理教室を行うご自宅へ。 魚のさばき方や寿司の握り方を見たり、同行の参加者と語り合ったり。 それはそれは最高に楽しい体験でした。 おすすめします!!

You need to book this tour! Iwabuchi is incredibly knowledgeable. He showed us all around the fish market and was able to answer all of our questions. He is a fantastic sushi chef and he taught us a lot about Japan and its people. We had a lot of snacks at the market (which also has lots of great gifts to buy for friends at home- dashi, green tea, assorted dried goods, cute dishes) and we were still able to gorge ourselves on selected sushi dishes crafted by Iwabuchi. We enjoyed sake, beer, and conversation as well. It was a great tour and you will not be disappointed. He even takes professional grade photos of your group and shares the, within you after the tour! Thanks Iwabuchi!

Leider leider eine schlechte Bewertung für diese Tour.
Ich erwartete so viel mehr Interkation und Führung von unserem Guide. Ich erwartete eine echte Tour über den Markt. Stattdessen sind wir einfach durch die Gassen spaziert. Das kann man halt auch alleine machen.
Selbst die Karte die wir geschenkt bekamen, kann man kaufen (50¥).
Einzig der Halt am Tamagoyaki stand war, was ich mir vorgestellt habe. Aber ansonsten gab es keine Geheimtips oder spezielle Empfehlungen oder Besonderheiten erklärt. Iwabuchi San reagierte auf Fragen, und ging auf alles ein was wir zB kaufen wollten. Aber war nicht proaktiv sondern wartete immer darauf dass die Gäste etwas fragen. Es gab kein eigenes Konzept, zu wenig Substanz für eine Tour.
Das Studio, ist sein privates Appartment, was mich ehrlich gesagt gestört hat. Zudem ist es ausserhalb der Stadt. Von Tsukiji fährt man 30min mit seinem Auto dorthin.
Das hätte man in der Beschreibung erwähnen sollen.
Während er kocht, trinkt man und beobachtet ihn beim kochen. Wenig Erklärungen zu dem was er macht, keine Rezepte oder mitmachen.
Ich hatte mir vorgestellt dass es interaktiver ist. Aber man sitzt eigentlich nur am Thresen und wartet. Gut war: Bier und Sake bis zum umfallen.
Iwabuchi San ist Koch mit Leib und Seele aber kein Tourguide.
Mir war die Zeit viel zu lang, wir standen und sassen oft rum und warteten auf irgendwas.
Insgesamt zu teuer für das Gebotene!
Ich bin 1-2h eher gegangen weil ich meine Zeit anders besser verbringen wollte.
